Samosa Recipes (Stuffed crispy snack)

Ingredients

For the Dough:

  • 2 cups all-purpose flour
  • ¼ cup ghee or oil
  • ½ teaspoon salt
  • ½ cup water (as needed)

For the Filling:

  • 3 large potatoes (boiled & mashed)
  • ½ cup green peas
  • 1 small onion (finely chopped, optional)
  • 1 teaspoon cumin seeds
  • 1 teaspoon ginger-garlic paste
  • 1 green chili (finely chopped)
  • 1 teaspoon garam masala
  • 1 teaspoon coriander powder
  • ½ teaspoon turmeric
  • ½ teaspoon chili powder
  • 1 teaspoon amchur (dry mango powder)
  • Salt to taste
  • 2 tablespoons chopped cilantro
  • 1 tablespoon oil

For Frying:

  • Oil for deep frying

Instructions

Step 1: Prepare the Dough

  1. In a bowl, mix flour, salt, and ghee/oil until it resembles breadcrumbs.
  2. Gradually add water and knead into a stiff dough. Cover and let it rest for 30 minutes.

Step 2: Make the Filling

  1. Heat oil in a pan, add cumin seeds. Once they splutter, add onions, ginger-garlic paste, and green chili. Sauté for a minute.
  2. Add peas, mashed potatoes, and all the spices. Mix well.
  3. Cook for 2-3 minutes, then turn off the heat and mix in chopped cilantro. Let it cool.

Step 3: Shape the Samosas

  1. Divide the dough into equal portions and roll each into a small oval shape.
  2. Cut the oval in half, making two semi-circles.
  3. Form a cone by folding one side over the other, sealing the edge with water.
  4. Fill with potato mixture and seal the top.

Step 4: Fry the Samosas

  1. Heat oil in a deep pan over medium-low heat.
  2. Fry samosas in batches until golden brown and crispy (about 8-10 minutes).
  3. Drain excess oil on a paper towel.
